Since launching in June 2017, ROM Roses brings to the table the best local ingredients selected every day by our chefs from regional producers and the fish market in the town of Roses.

The result is an experimental cuisine awarded by the renowned Michelin Guide which, respects the traditional gastronomy of Empordà and reinvents it for 21st century palates.

Some say that ``simplicity is the ultimate sophistication``. Our Anchovies El Xillu from the neighbouring town of L'Escala are a clear example of this! Accompanied here by one of Catalan cuisine’s classics: tomato bread (Pa amb Tomaquet).
